Birthday Supper

We had a little birthday party here today! Gail turned 70 and she wanted a quiet dinner with a neighbor. Pie and pasta were requested. I rarely make apple pie, but Gail gets what she wants for her birthday. I had some heirloom apples that were red-fleshed. Very pretty, tart, and flavorful. I mixed in a quince and some more random heirloom apples to fill it up, put in the minimum sugar and seasoned it with nutmeg and cinnamon. I cracked open a can of cougar gold cheese to go with. Gail wanted sharp cheddar and I just happened to have one of the best on hand.

The pasta was fabulous too. Super easy, I could whip that up regularly, but oddly I hadn't made it in 20 years. It was linguini with clam sauce. I used a little anchovy paste, onions, parsley, garlic, lemon zest, champagne, and canned clams in broth. Finished it with just a little cream. The cream gave it a silky texture. A little champagne, a little French bread, good company, what a great meal!

Sounds like she had a lovely dinner! So glad to hear and wish I could have had some. Definitely sounded yummy!

YUM!! Never seen red fleshed apples before. Looks like rhubarb, my favorite. Hmmm....my birthday's in July...mumble, mumble :)
